I have dreams that I have homemade meals every Sunday night. Nonetheless, it's just not possible, but every now and then I'll whip up an easy meal. Tonight, I made some grilled chicken nachos that were so easy to put together. It required minimum cooking, just how I like for a Sunday evening. Keep in mind, you can add more ingredients and substitute as many items as you'd like. My version of these nachos was made with the ingredients I currently have in my refrigerator and pantry. I originally wanted to make them with chorizo but I just couldn't get myself to go to the store. Next time, I'll have to make it with chorizo.
Tip: when you add the Oaxaca cheese don't be afraid to put in between the chips.
Tip: put the sour cream inside a squirt bottle so its easy to apply.
- 2 pieces skin/boneless chicken thighs
- 1/2 pound Oaxaca cheese
- 2-3 handfuls Homemade Corn Chips
- 2 radishes - sliced
- 1 serrano chile - sliced
- 1 bunch cilantro - chopped
- 1/2 a cup cotija cheese - grated
- 1/2 avocado
- 3 tablespoons sour cream
- salsa
- 1/2 pound pico de Gallo
- 1 tablespoon garlic salt
- 1 tablespoon onion powder
- 1 tablespoon pepper
