Growing up I never went camping. Adam did grow up camping with his family and it's something he has looked forward in doing with our boys. We've done the tent camping and RV camping before because my husband really does try to make it a pleasant experience for me.
So this time around we tried something new... "glamping." I guess this is what compromising looks like in a marriage huh? Hehe. It was a vintage airstream trailer that was remolded from the inside and it came with pretty much everything except food. We only had to bring our clothes and food for 2 meals. I actually loved the fact that we didn't tow with us tents, pots, pans, blankets, etc. We ate out the other times and I absolutely loved that part, even though I enjoy cooking for my family as well.
I wanted to pack light plus make it easy to cook so I planned ahead. I made a tin foil dinner with chicken and veggies and we also added corn on the grill. Check out my CAMPING board on Pinterest for more camping hacks. For breakfast I pre cooked potatoes with chorizo and simply re heated them that morning. I topped it off by making some over easy eggs. I really do eat with my eyes first. Anyone else?
Below are places we visited in Big Sur. There is so much to see along the Highway 1 but because of the fire that was going on a few popular places were closed.
